The build-your-own burrito or bowl concept restaurant, located at 1704 S. Main St., opened the evening of Feb. 17 and in the first week, the total sales were third highest among all stores, both corporate and franchise, local store owner Steve Collins said.
“We’ve been overwhelmed with the response we’ve had from this community especially in the inclement weather we’ve had,” Mr. Collins, who also owns a Springfield franchise store, said. “For people to come out in that weather and support us the way they have is phenomenal.”
The concept is similar to build your-own-sandwhich shops, but instead of bread with cold cuts and veggies, customers select from flour tortillas, bowls or tacos topped with their choice of five different meats or a vegetarian option outfitted with beans, rice and salsa.
